6 red petters
1/2 cup olive oil
1 medium yellow onion chopped
4 links sausage
5 cloves garlic
1 28 oz can italian tomotoes
1/2 cup red wine
3 tbls chopped black olives
3 tbls italian bread crumbs
2 tbls parmesan
3 tbls parseley
6 anchovy filets
cayenne pepper

Preheat oven to 350
Core peppers.Heat 1/4 of the olive oil. Add the onions and sausage meat and saute. until onions translucent and sausage is brown, about 2 minutes. Add garlic and saute another minute. Break up the tomatoes and add to the pan. Add 2 tablespoons of red wine, tomato paste, and olives. Cook stirring until the liquid reduces to less than half, about 4-5 minutes. Add bread crumbs, cheese, parsley, anchovies and good pinch of cayenne. Stuff the peppers.
Pour rest of olive oil in the bottom of the pan. Add peppers and place any leftover stuffing the bottom of the pan. Add 1/2 cup red wine and bake in oven for 1 1/2 hours until peppers almost collapse.
