Ingredients
olive oil
2 teaspoons sugar
1 black eyed peas
1 kidney beans
1 butter bean
1/2 cup apple cider vinegar
2 teaspoons dijon mustard
scallions

Combine canned beans (drained and rinsed). Mix together apple cider, drizzle of olive oil, dijon mustard, sugar, black pepper and chopped scallions. Marinate for 30 minutes.
