Ingredients 4 poblano chiles, roasted and peeled 1 lb chicken breasts, salted 1 medium onion sliced 3 garlic cloves, minced 6 oz spinach 4.5 oz swiss chard 3 oz another green called quelites 1 cup cream Pan fry breasts until browned and medium rare. approx 4 min on first side and 5-6 min on second. Remove from pan. Fry onion until browned and sweet approx 8-9 minutes. Cut chicken in 1/2 inch cubes. Add garlic to onion and cook 1 minutes. Add chopped green (1 inch chop) on medium high. Add chicken and chiles. Cook until most of liquid is gone. Add 1 cup cream and cook until thick. approx 5 minutes. Add salt. Serve with corn tortillas and Spanish Rice (j).
